Take away supper.





Generally I do take away supper for people in my community a few times a month. For families with new babies, or those with sickness or some other need for a little extra loving. It's something I enjoy -- cooking, AND feeding people -- and something that our means allow us to do because I've become quite good at stretching resources.

Today I'll be delivering a meal to a family who just had a new baby. I haven't met them before, but the mama and I both utilized the same wonderful childbirth educator, and "know" one another through an online mother forum which is mostly made up of friends and alum of said class.

Having taken stock of my larder, deep freeze and fridge, I've determined to make sausage and apple stuffed acorn squash (doesn't that sound yummy?), a spinach salad, some sweet treat. I think the latter will be a bread pudding, utlizing some French bread I've put by.

    This is a quick-like McFamily favorite:

    TOP (Tempeh, Onions, Peas)

    Roughly chop a couple of sweet onions. Saute them in a bit of olive oil until soft and fragrant. Take an eight ounce brick of tempeh. Slice it in bite sized pieces. Toss into the skillet with the onions. Cook until tempeh begins to brown. Take a bag of frozen English peas. Dump into the skillet. Stir 'round just until the peas heat through. Dump in some sea salt and freshly ground black pepper.

    Serve over rice or couscous.
