When does it go out like a lamb?


Here we are in the final days of March -- yesterday went from cool and drizzly, to sunny and hot with threatening thunder storms that became heavy rains, whipping winds and tornado warnings. This morning, we turned the heat back on after not having done so for a few weeks, making do instead with an extra layer. But the Mister is who turned on the power to combat the chill, even.

And so tonight, it's chili. Chili Mac, actually, as it's the current favorite fare of our resident child; and done taco-soup style, it's a sure-fire way to get vegetables into the diet of our increasingly picky eater. Both ground beef and pork go into a big pot, to brown with sauteed onions, garlic and generous seasoning -- chili powder, cumin, black pepper and salt.... In go chopped and pureed tomatoes, beans, corn, peppers. Simmer, stew, and stir.

As the day draws to a close, we'll gather to give thanks, and I'll serve this over macaroni and garnish with cheese, sour cream, diced onion and cilantro. Warming and good.
